Easy Keto Brownies | Sugar-Free, Low Carb Brownie Mix

The idea of Keto, low carb, sugar-free brownies sounds fantastic, but actually making a batch of brownies every week doesn’t!

When it comes to meal prepping each week I tend to search for “easy keto recipes,” and I’m so excited that I found this super easy low carb brownie mix.

Now I can have a 3 net carb brownie included in my keto diet menu every evening guilt free and hassle-free.

The recipe only calls for 4 simple ingredients, coconut oil, water, eggs, and the Lakanto Brownie Mix.

Before you start mixing everything together, preheat your oven to 325 F and lightly grease an 8 X 8 baking pan.

Not till recently did I have an 8 X 8 and usually I’d just use a slightly bigger or smaller pan, but I figured since I was planning to share these with you I figured I should purchase the correct size baking pan.

If you don’t have an 8 X 8, I wouldn’t suggest using a larger pan because these brownies are already fairly thin. However, you could get away with a slightly smaller pan or even a muffin pan.

Next, you’ll combine the brownie mix, melted coconut oil, water, and eggs and whisk it all together.

You can have a little fun with it and add walnuts, chocolate chips or your favorite addition to brownies or have it alongside your favorite low carb ice cream. (We dusted ours with Lakanto powdered sugar after pulling them out of the oven)

Pour the batter into the baking pan, spread it evenly and then bake for 20- 25 minutes. The package says 25-30 minutes, but we set the timer for 25 minutes and ended up taking it out a little early to prevent the edges from getting overcooked.

Once the brownies have cooled a little cut it into 16 even brownies.

Lakanto’s Brownie Mix is sweetened with monk fruit. Monk fruit is a zero calorie, zero glycemic index sweetener and a great way to enjoy dessert without the harmful effects of sugar or too many carbohydrates that knock you out of ketosis.

Lakanto Sugar-free brownies are:

  • Sugar-free - sweetened with Monkfruit Sweetener which has Zero Calories and is Zero Glycemic

  • Low Carb - Just 3 net carbs and high fiber

  • Keto friendly, Diabetic friendly, Gluten-free, Dairy-free & Plant-based

  • All Natural - No Artificial Ingredients, No Stevia, No Maltitol, and No Aftertaste

Just because you are following a healthy diet doesn’t mean you can’t enjoy dessert. Chocolate is not the enemy, sugar is, so you just have to be more selective of the ingredients used to make your favorite chocolate desserts!

Monk fruit is actually a small, round fruit grown exclusively in Guilin, China, which was used for centuries in traditional eastern herbalism to increase chi and well-being.

Lakanto still grows and harvests their Monk Fruit in the same pristine area and follows the traditional and environmental methods.

With other low carb sweeteners I have tried I hated the strong aftertaste. Lakanto Monkfruit sweetener doesn’t leave that bitter aftertaste or burning feeling going down.

My husband said he got a hint of blueberry from these brownies, which I didn’t really notice until he pointed it out.

Like I mentioned before these make a thin brownie if you use an 8 X 8 baking pan, pretty accurate to the picture on the front on the packaging.

I read several reviews that people used muffin pans or smaller pans and portioned them out into 8 brownies instead of 16.

Overall, If you are looking for a quick, easy, keto friendly brownie to incorporate into your daily keto diet menu, this Sugar-free brownie mix is a must try.
