I'm OBSESSED. These Brownies are perfection, fudgy, thick, rich and although I love Avocados, I was excited that you can't really tell they are made with avocados. You seriously have to try these and while your at it make this Mint Chocolate Gelato and make it a brownie sundae ;)

Finally, keto friendly brownies. I've gone through recipe after recipe trying to find the perfect keto brownies recipe, but nothing really felt like true brownies. Until, I made these AMAZING Keto Brownies.
My Husband had to hind them, because I literally couldn't stop eating them. True Story. I think I might even go as far as saying theses are my favorite brownies ever, and wouldn't even believe that these are sugar free :)
If you Keto you probably already have almond flour in your pantry and if you don’t you should! I use Now Foods Raw Almond Flour it’s 100% pure, unblanched, gluten-free, and low in carbs, making it a healthy, and tasty alternative to bleached white flour. It’s a staple ingredient in a lot of keto desserts and other recipes.
How Are They Sugar Free?
My secret weapon Lakanto MonkFruit Sweetener, which tastes like sugar, but isn't really sugar, but is a natural occurring sugar alcohol with zero net carbs, zero calories, and is a zero glycemic sweetener!
How excited are you that this actually exists? Lakanto is Keto friendly, Paleo friendly, Vegan, NON-GMO, and All Natural.
If you prefer Truvia, Swerve or Stevia you can certainly use those instead, just keep in mind you may need to adjust the amount you use and the nutrition facts may be different.
Avocado Fudge Brownies
Recipe makes 16 brownies
Prep time: 10 minutes
Cook time: 30 minutes
What You Need
- 6 oz unsweetened dark chocolate baking chips - I used Pascha Chocolate Chips
- 4 teaspoons pure coconut oil
- 2 cup avocado with skin removed (460g) roughly 4 medium avocados
- 4 eggs
- 1 cup Lakanto Monkfruit sweetener or erythritol Sweetener
- 1 cup Now Foods almond flour
- 1 cup Now Foods unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoon vanilla extract
How to Do it
Preheat oven to 350F
Line a 13 x 9 pan with parchment paper. Set aside.
In a small saucepan add the dark chocolate chips and coconut oil. Bring to medium heat until fully melted.
In your food processor, add all the ingredients: avocado, eggs, monk fruit or erythritol, almond flour, unsweetened cocoa powder, baking soda, salt, vanilla extract and melted chocolate
Process until all the ingredients are well blended and mixture is the consistency of a thick brownie batter.
pour the batter into the prepared 13 X 9 pan. Use a spatula to spread the batter evenly in the pan.
Bake for 25-30 minutes or until a tooth pick inserted in the middle of the brownie comes out clean.
Let cool. cut into 16 even brownies and ENJOY <3
