Super Fudgy Avocado Brownies

I'm OBSESSED. These Brownies are perfection, fudgy, thick, rich and although I love Avocados, I was excited that you can't really tell they are made with avocados. You seriously have to try these and while your at it make this Mint Chocolate Gelato and make it a brownie sundae ;)

Sweetener Options

For this recipe I used Lakanto MonkFruit Sweetener, which tastes like sugar has zero net carbs, zero calories, and is a zero glycemic sweetener. Lakanto is a mix of monk fruit and erythritol that is Keto, Paleo, Vegan, NON-GMO, and All Natural

Erythritol is another one of my go to sweeteners because it is also a naturally occurring sugar alcohol that contains virtually no calories, has a low glycemic impact and taste just like sugar. If you prefer truvia, swerve or stevia you can certainly use those instead, just keep in mind you may need to adjust the amount you use and the net carbs may be different. 

Net Carbs

Keep in mind that when following a keto style meal plan you count net carbs (Total Carbohydrates - Dietary Fibers) This recipe has 9.4 g of carbs and 4.1g fiber, so 9.4-4.1 = 5.3 Net Carbs per brownie.

The recipe makes 16 servings

  • 6 oz unsweetened dark chocolate baking chips - I used Pascha Chocolate
  • 4 teaspoons pure coconut oil
  • 2 cup avocado with skin removed (460g) roughly 4 medium avocados
  • 4 eggs
  • 1 cup Monkfruit or erythritol Sweetener 
  • 1 cup almond flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoon vanilla extract 


  1. Preheat oven to 350F

  2. Line a 13 x 9 pan with parchment paper. Set aside.

  3. In a small saucepan add the dark chocolate chips and coconut oil. Bring to medium heat until fully melted. 

  4. In your food processor, add all the ingredients: avocado, eggs, monk fruit or erythritol, almond flour, unsweetened cocoa powder, baking soda, salt, vanilla extract and melted chocolate

  5. Process until all the ingredients are well blended and mixture is the consistency of a thick brownie batter.

  6. pour the batter into the prepared 13 X 9 pan. Use a spatula to spread the batter evenly in the pan.

  7. Bake for 25-30 minutes or until a tooth pick inserted in the middle of the brownie comes out clean.

  8.  Let cool. cut into 16 even brownies and ENJOY <3
