Crockpot Sugar Free BBQ Shredded Chicken

This CrockPot Sugar-Free BBQ Shredded Chicken Recipe is easy to prepare and the best way to feed a crowd or enjoy as an easy Low Carb BBQ Chicken bowl or even make a Keto friendly BBQ Chicken sandwich.

I don’t know about you but I love a juicy BBQ pulled chicken sandwich with coleslaw on top, and even if you are following a Keto Diet or just trying to live a healthy lifestyle you can still enjoy your favorite meals. This sugar-free BBQ shredded chicken is delicious on its own or can easily be turned into a yummy low-carb lunch or dinner.

INGREDIENTS YOU’LL NEED TO MAKE CROCKPOT SUGAR FREE BBQ CHICKEN:

  • CHICKEN- you’ll need at least 2 lbs, but I suggest doubling the recipe if you are feeding a large crowd or family for dinner. You can use just chicken breasts or do 1/2 breast meat and 1/2 thighs.

  • SUGAR-FREE BBQ SAUCE- I used Primal Kitchen Classic BBQ, which is organic, unsweetened, and has a bold, smoky flavor. It’s certified Paleo, Keto Certified, gluten-free, and Whole30 Approved®, this is a pantry staple in my house for sure.

  • ITALIAN DRESSING- I used Primal Kitchen Zesty Italian Marinade, which is a citrusy dressing made with avocado oil. It’s vegan, Whole30 Approved®, Certified Paleo, and Keto Certified.

  • BROWN SUGAR ALTERNATIVE- I prefer using Lakanto Golden Monkfruit Monk fruit contains zero calories and is a 1:1 sugar replacement, making it super easy to substitute in any recipe.

  • WORCESTERSHIRE SAUCE

You're just going to throw all these ingredients into the crockpot on HIGH for 4 hours, shred the chicken using two forks and then let it sit on keep warm for 15 minutes and the chicken will absorb the liquid into a perfect BBQ sauce.

EASY KETO PULLED CHICKEN SANDWICH

You’ll already have the sugar-free BBQ Shredded chicken, and for the buns, I prefer to use cauliflower thins. The brand I use is Outer Aisle Cauliflower Original Sandwich thins and you will find them at most local grocery stores, but the best price I have seen is at Costco. I linked them on Amazon, but if you have access to Costco I’d wait and grab them there.

The best addition to a pulled chicken sandwich is coleslaw on top. You can easily make a low-carb coleslaw for your sandwich or enjoy on the side.

LOW CARB SHREDDED BBQ CHICKEN & COLESLAW BOWLS

my second favorite way to enjoy this crockpot bbq shredded chicken is to put low carb coleslaw in the bottom of a bowl and top with the shredded BBQ chicken.   1. Add all ingredients to the crockpot and cook on LOW for 4 hours or HIGH for 8 hours.
  2. Use two forks to shred the chicken and mix the chicken into the liquid.
  3. Put the crockpot cover back on and leave of keep warm for 15 minutes to allow the sauce to thicken.
