Easy Keto Vegan Salad Recipe for Lunch
When it comes to meal prepping I need easy recipes for lunch. I over complicate my Keto diet menu I end up grabbing something easy that probably isn’t Keto approved.
Throwing together an easy Keto salad is my go to and I have found the best salad dressing for a Vegan or Keto diet that I look forward to around noon every day.
On top of delicious Keto salad toppings, these salad bowl ingredients are great brain foods.
The main component is the Organic Arugula Mix, which has a slightly tangy taste that adds a little more flavor to your Keto salad than regular lettuce.
Arugula is a cruciferous vegetable in the same family as broccoli, kale and Brussels sprouts.
Arugula contains nitrate which has been shown to lower blood pressure and enhance athletic performance.
To add a little crunch and of course more vitamins and brain boosters the easy salad recipe calls for Trader Joes Cruciferous Crunch, which is shredded Kale, Brussels Sprouts, broccoli and green and red cabbage.
By the Way, the Cruciferous Crunch is great sautéed by its self as well.
Of course, sliced almonds are included in this keto salad recipe too.
Almonds are a great source of vitamin E, lowers cholesterol levels, good for your heart and a source of protein for vegan recipes.
This easy salad recipe calls for 2 ounces of blueberries to add a little sweetness, which pairs perfectly with the rest of the salad.
The benefits of blueberries is a long one, but to name a few, potassium, vitamin C, vitamin B6 and supports brain and heart health!

MCT oil also promotes healthy metabolic function and digestion
What’s a Keto salad or Vegan Salad without Avocado? Avocados are incredibly nutritious and actually contain more potassium than bananas, are loaded with heart-healthy monounsaturated fatty acids, and high in fiber.
To top it all off the best salad dressing for Keto or vegan salads, Trader Joe’s Green Goddess Salad Dressing. This vegan salad dressing is cold pressed lemon juice, herbs and veggies all blended together.
To be exact the ingredients are avocado, apple cider, vinegar, green onions, lemon juice, chives, parsley, olive oil, yellow onion, basil, garlic, sea salt, and black pepper. So clean and healthy.
The nutrition label can’t be beat either. 20 calories, Total Fat 2g, Saturated fat 0g, Total Carbohydrates 1g, Total sugars 0g. This is a must try, you will love it.
Ketogenic Diet Macros
I have found that most people starting out on Keto don't realize that you should be counting Net Carbs when following a Keto Diet. So when you look at the nutrition label you subtract Fiber from the Total Carbs and that equals Net Carbs.

Avocado, Almond & Blueberry Salad Recipe
Recipe makes 1 serving
Prep time: 1 Minute
WHAT YOU NEED:
- 1 cup of Arugula Mix
- 1/2 cup Trader Joes Cruciferous Crunch
- 15g sliced almonds
- 1 oz Blueberries
- 1/2 ripe avocado
- 1-2 tablespoon Trader Joes Green Goddess Dressing
- 1 tablespoon Perfect Keto MCT Oil (optional)
HOW TO DO IT:
- Combine all the ingredients (put dressing and MCT oil on the side if you aren't eating immediatly)
