Keto Avocado Toast with Egg Recipe

When I was searching for new healthy breakfast ideas I kept seeing “how to make avocado toast” and people were raving about it. I discovered that it was exactly what it sounded like… toast with avocado on top. 

Of course, since I’m an avocado lover I had to give a simple avocado toast recipe a try, which everyone was right, it's delicious and the easiest Keto breakfast ever. 

Since it’s such a simple concept, “The Best Avocado Toast Recipe” is all about the avocado toast toppings.

I set out on a mission to find “The Best” avocado toast for you that had to meet 3 important criteria (besides being the best of course).

Let’s start with the Keto friendly “toast”. 

My hubby found these Crispbreads at Trader Joe’s and I use them in place of bread. I love using them for tuna salad and my husband likes putting cream cheese and smoked salmon on them. They are great with almond butter or served alongside soup! 

Trader Joe’s Crispbread is gluten free and only 3 net carbs. 

Its ingredients include sunflower, sesame, and flax seeds; oat flakes; rice bran; potato fiber; and a few other straightforward additions, like salt and a touch of honey.

On top of the Crispbread, you spread 1/2 of a mashed avocado. 

Then fry or scramble 1 egg and place on top of the avocado spread. 

Finally, to finish it off sprinkle on some salt, pepper and crushed red pepper flakes for a little kick and there you have it!

It’s seriously the easiest, tastiest, best avocado toast recipe!

I have found that most people starting out on Keto don't realize that you should be counting Net Carbs when following a Keto Diet. So when you look at the nutrition label you subtract Fiber from the Total Carbs and that equals Net Carbs

Keto Avocado Toast with Egg

Recipe makes 1 serving

Prep time: 5 Minutes

WHAT YOU NEED:

  • 1 Trader Joe's Crispbread

  • 1 Fried or scrambled egg

  • 1/2 an avocado

  • pinch of salt

  • pinch of black pepper

  • pinch of red pepper flakes

HOW TO DO IT:

  1. Fry or scramble 1 egg

  2. In a small bowl use a fork to mash half of a skinned avocado

  3. Spread avocado onto 1 Crispbread, top with cooked egg and sprinkle with salt, pepper and red pepper flakes
